"I won the Shaker Competition in Brussels three times. For younger barmen, it is often important to go outside your own country. I am Italian and I came to Belgium in 1970."

How long have you worked in Brussels?
"I've been at the Royal Crown Hotel for 27 years. I like what I do and I don't really want to look for another position - I have a passion for mixing."

What would the minimum time be to become a good mixologist?
"I would say that you need a minimum of two to three years to be a good bartender."

Are there any nationalities that perform better at cocktails than others?
"Latin people are very good for this job because they connect really well with guests. There is a lot of psychology to the job"

Did you think your cocktail would do so well in the Competition?
"I had confidence in my drink."
